
This is one of my favorite summer salads and can always be seen flanking the picnic table at our family parties. It sounds unusual to people who have never tried it, but just about every cucumber lover enjoys this cool, summer salad.

Ingredients:
- 1/2 cup sour cream
- 3 tablespoons white vinegar
- 1 tablespoon sugar
- Salt and Pepper to taste
- 4 medium cucumbers, peeled if desired, and thinly sliced
- 1 small sweet onion, thinly sliced and separated into rings
Instructions:
In a large bowl, whisk sour cream, vinegar, sugar, salt and pepper until blended. Add cucumbers and onion; toss to coat. Refrigerate, covered, at least 4 hours. Serve with a slotted spoon. Yield: 8 servings.
Note: You can add fresh dill weed to add a new, bold flavor to this tasty salad
Note: You can play with the vinegar/sugar mixture. If you prefer a more tart salad (like me), nix the sugar and add a bit more vinegar.
