Underground Ham Casserole: A Quick Easy Summer Dish

When the weather gets warm and everyone wants to be out, cooking is not always what one wants to do! This recipe is quick and easy to make with very little clean-up – perfect for the season.

Serve with your favorite vegetable or side salad. Your family will love you for it!

Mix all of the following 7 ingredients and heat.

2 Cups cubed ham
2 Tbl. Oleo
¼ Cup chopped onion
1 Can cream of chicken or mushroom soup
½ Cup milk
1 Cup Velveeta cheese
1 tsp. Worcestershire sauce

Make your mashed potatoes; mix with sour cream, set aside.

2 – 3 Cups of mashed potatoes (real or instant) I prefer real.
1 container of sour cream

Put the heated ham mixture in bottom of casserole dish and top with potatoes.

Bake at 350 degrees for 20 minutes.

Suggestions: You may top this casserole dish with fried bacon pieces.

Top with shredded cheese during the last 5 minutes.
