January 28 is National Blueberry Pancake Day!

Pancakes are not just breakfast food – they are anytime food. No matter what the weather, be it cold and snowy or hot and steamy, who doesn’t love pancakes! They can be made with all natural whole grains and sweeteners, or with traditional ingredients.

By adding the blueberries, you’ve just added another dimension of fun, especially if you have kids. Why not let them drop in those tasty eyes, noses, and mouths to make faces after you pour the batter onto the griddle? And who says you have to stick to round pancakes? Make them any shape you want! How about into one of those ‘snow rollers’ we’ve seen outside recently! Or a snowman? Maybe you have large metal cookie cutters to pour batter into.

pancake_tossing For those who want some added fun, try that flipping trick! You know – just like the ‘real’ chefs do. Toss that pancake up and over after the bottom has cooked and see if you can get it to land back in the pan. (Do NOT try this on carpeted surfaces!)

Or, here’s a fun one. I used to do this with my kids. They would stand on the other side of our table with their plates out and I would toss them directly from the pan or from the spatula over the table onto their plates. The braver ones would stand further away. Of course, since my aim was not always so accurate, they would have to stretch or maybe even make a quick dart over to where it was headed and catch it before the floor did. No matter – whether you opt for boring or brave transport, they sure are yummy once covered in real Ohio maple syrup. Mmmm-mmmm good – for sure!

Here’s an easy recipe you can add a cup of fresh or frozen blueberries to if you like. Or wait and add them after poured onto the griddle for decorations.

Basic Pancake Recipe

2 cups flour

pancake-hearts1 3/4 cups milk

2 tablespoons baking powder

2 eggs, beat them separately before adding to mixture

1/4 cup butter, melted (1/8 of a pound)

3 tablespoons sugar

1 teaspoon salt

Blueberries!

Mix the dry items first.

Combine the eggs and melted butter to the milk and slowly stir in the flour.

Let sit at least 10 minutes while heating the pan or griddle.

Place on the griddle and cook to your liking!

These will be high, but light and fluffy .
