The art of creating a scrumptious meal from whatever the cupboard is hiding at that moment has produced numerous favorites for many families. Here’s another one of those that can be added to that list!
Some nights it seems I just don’t have enough time to make a great well rounded meal. That is until recently when I grabbed a few items from the cabinet and fridge. Thinking they should complement each other nicely, my work began. I threw them together as quickly as possible, set the dinner table and placed my finished casserole in the middle. Along with my casserole dish I served up applesauce, bread and butter, and my balanced meal was complete – in less than 25 minutes! My family loved it, and yours will too!
INGREDIENTS:
1 Pkg. Knorr Asian Sides – Teriyaki Rice
1 Pkg. (13 oz.) Eckrich Turkey Smoked Sausage, (1/2 the fat), Cut into 1 inch pieces.
8-16 oz. of Broccoli
Make rice according to directions. I used a casserole dish, adding 1 tablespoon of oil, and cooking according to the microwave instructions.
In a medium sauce pan, cook your cut up turkey sausage and broccoli together until broccoli is tender, Drain.
Mix together the rice, turkey sausage, and broccoli then place back into your casserole dish, top with cheddar cheese, approximately 1 cup, more or less to your preference.
Place back into microwave to melt the cheese, approximately 40 seconds.
My family loved this casserole so much, that I have been changing the recipe to suit what I have in the fridge and cabinets. Just recently I replaced the basic ingredients with Polish Kielbasa, Knorr Asian Sides – Chicken Fried Rice, and frozen corn with the same instructions. I have found that with this basic combination of ingredients, your possibilities are almost endless. Why not create your own personalized casserole! There is no right or wrong way to this recipe, only have fun with it.
