Mandarin Orange Dessert

The outdoor entertaining season is upon us. Here is one of my favorite go to desserts for when I want to serve something up to my guests that will be cool and refreshing. You can switch out the fruit and jello according to what is on hand or seasonal. I love substituting fresh strawberries and strawberry jello Just imagine the possibilities and make it your own! You can use a 9×9 pan instead of a pie tin. Double this recipe if you would like to use a 13×9 pan. For an added treat I serve cool whip on the side and let everyone add it as a topping – so delicious!

Ingredients:

  • 1 1/3 cups graham cracker crumbs
  • 1/4 cup of sugar
  • 1/3 cup of butter, melted
  • 8 oz. package of cream cheese
  • 1/4 cup of sugar
  • 1/4 cup of milk
  • 8 oz. container of Cool Whip
  • 1 lg. orange Jello
  • 1 sm. can of mandarin oranges

Directions:

BOTTOM LAYER-CRUST:

Mix together graham cracker crumbs, 1/4 cup of sugar and melted butter. Press into 9 x 13 inch dish; chill.

MIDDLE LAYER:

Beat cream cheese and 1/4 cup sugar with electric mixer. Gradually add the milk. Fold in Cool Whip. Spread over crust, chill

TOP LAYER:

Make Jello according to package directions, chill slightly but not set. Lay orange pieces on cream cheese. Put chilled Jello over top. Cover and keep in refrigerator until ready to serve.

Note: When using smaller fruit like blueberries or pineapple I suggest using at least a third more fruit for the top layer. Give or take to your liking.
