National Night Out has been celebrated on the first Tuesday in August across the nation since 1984. It’s sponsored by the National Association of Town Watch (NATW). The purpose of this night is to help raise awareness of communities and police working together in an effort to fight crime. The occasion usually includes various neighborhood events such as festivals, parades, and cookouts that may involve activities like car seat inspections and child fingerprinting, and displays from emergency services, sheriffs’ departments, DARE, MADD, Lifeflight helicopters, K-9 teams, restaurants, and other businesses.

New in Town – The Proper Pig Smokehouse
Part of the Streetsboro event will include local food trucks in the parking lot. One of the food trucks, The Proper Pig Smokehouse, will be cooking real Texas BBQ and smoking all of the meat onboard the truck. It’s a new company started this summer by Mr. Shane Vidovic and Mr. Ted Dupaski, who discussed the idea for about one year before embarking on this new adventure. They love everything about smoked meats, from the simplicity of the cooking style to the patience required to create great tasting BBQ (most of the meat is smoked for over twelve hours).
The Proper Pig Smokehouse truck has a smoker installed inside the truck so all of the meat is prepared on the truck during the event, allowing the customers to experience the delicious smell of the hickory smoke. They are best known for their slow smoked meats with the stars of the show being pulled pork and Texas style beef brisket. They are also currently working on some new menu items including a smoked sausage sandwich topped with pulled pork and coleslaw as well as their take on chicken and waffles, a cheddar jalapeno waffle topped with slow smoked chicken, and also smoked thick cut bacon on a stick.

Building The Pig – Properly
Mr. Vidovic stated that the process of starting a food truck is not easy as there are many permits and licenses needed, and self-promotion to get their name known is a tough task.
He and his partner personally built the truck from the ground up which took around five months to complete. They spent countless hours away from their families to get the truck where it is today and wouldn’t have gotten this far without their families’ encouraging support. They often felt like they would take one step forward and two steps back during the process and had a running joke that “the #1 rule of building a food truck is to NOT build a food truck!” They advise not to start a food truck unless that person is ready to dedicate a large portion of their life to it and really love what they are doing. However, they feel that if someone decides to take the leap, to have faith in their skills and go for it 100% without looking back!
It helps that Mr. Vidovic and Mr. Dupaski are close friends because working in the truck can get very intense. They must work together in a very warm tight space without much room to move around. So far they are enjoying the experience and are very glad they chose this endeavor. They’ve met many people from all different walks of life and since the process is still so new to them, every day has been a surprise. Their goals are to make sure the food is always consistent, constantly work to improve the quality, and also create new twists to the menu.
They are very excited about working at Streetsboro’s National Night Out event. They will be at Macedonia’s Movie in the Park on August 8, and have been given the awesome opportunity to take part in the upcoming Cleveland Flea and Sunday Markets in Cleveland.
The Proper Pig can be found on Twitter and as The Proper Pig Smokehouse on Facebook.
Keep an eye out for them in a town near you!
