If you’re looking to make your next family meal a delicious, healthy one that is budget friendly and can stretch a long way, here it is! I like to serve this recipe over brown rice, and served alongside a healthy portion of fresh vegetables and fruit. This recipe will feed 4-6 people depending on the portion size.
As a 30 minute or less meal, it is perfect for whipping up after work when time can be limited, and it makes a great last minute meal before heading out to any sporting event. If you want, you can swap out the chicken sausage and use brats, or kielbasa instead.
- 1-2 Tablespoons of oil
- 1 package of Chicken sausage (4-5 links, I love using the Chicken sausage with cheese)
- 1-2 peppers any color you wish – sliced
- 1 Vidalia onion – sliced
- 1-2 fresh tomatoes – cut up bite size removing most of seeds and excess liquid
- Salt & Pepper to taste
In a large sauté pan or skillet, add 1-2 tablespoons of oil. Add sliced onions and peppers, cook on medium heat for about 5-10 minutes. (Just until transparent, not mushy)
Slice your chicken sausage links into 1 inch pieces on an angle cut. Place in pan with onions and peppers.
Allow to cook thoroughly on medium heat for at least 5 minutes and then reduce the heat to simmer and continue to cook an additional 8-10 minutes.
During last 5 minutes add in the tomatoes.
Season to taste and serve.
