
In my quest to find healthy, low carb meals, I stumbled across this recipe for unstuffed cabbage. I absolutely LOVE this meal. Even my husband (who is not health conscious like me) says it’s a winner, too! Check it out!
Ingredients:
- 1 1/2 to 2 pounds 90% lean ground beef
- 1 tablespoon oil
- 1 large onion, chopped
- 1 clove garlic, minced
- 1 small cabbage, chopped
- 2 cans (14.5 ounces each) diced tomatoes
- 1 cans (8 ounces) tomato sauce
- 1/2 cup water
- 1 tsp salt
- 1 tsp pepper
Instructions:
In a large skillet or pot, add olive oil. Add ground beef and begin to brown.
Add onion, garlic, salt and pepper and cook until meat is browned.
Drain fat.
Add tomatoes and tomato sauce. Add chopped cabbage and water.
Cover, reduce heat, and simmer until cabbage is tender (20-25 minutes). Stir occasionally.
Salt and pepper to taste.
