Once sliced or cubed, lightly boiled in water, fried or baked, mashed or kept whole, serving with a little butter, salt and/or pepper, zucchini and squash make the perfect combination in many recipes when you use them together.
This is just one of those recipes that show how great zucchini and squash taste when paired together. This takes just 10 minutes to make and is great when paired with fish or steak. Simple, light, and delicious!
Ingredients:
- 4 to 5 small – medium sized zucchini
- 4 to 5 yellow crookneck squash, small – medium
- 2 tablespoons olive oil
- 2 tablespoons finely chopped onions
- Salt to taste
- Ground black pepper
- ¼ cup of shredded mozzarella cheese
Directions:
Slice the zucchini and squash very thin.
Heat the olive oil in a pan or skillet and sauté the chopped onion until tender.
Add zucchini and squash to the sautéed onion. Toss until tender and crisp. Add salt and pepper.
Top with shredded mozzarella cheese.
Serve immediately (do NOT let this sit too long it will become limp and mushy)
